    Prepare the Ingredients

    Wash and roughly chop the spinach. Cut the lamb shoulder into cubes if not pre-cut. Finely chop the onion, and mince the garlic and ginger.

    Cook the Lamb

    Heat the vegetable oil or ghee in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add Garlic and Ginger

    Stir in the minced garlic and ginger, cooking for an additional 2 minutes until fragrant.

    Spice it Up

    Add the ground cumin, ground coriander, turmeric powder, garam masala, salt, and black pepper. Cook for 1 minute to toast the spices.

    Add Lamb

    Add the cubed lamb to the pot, stirring to coat with the spice mixture. Cook for about 5 minutes until the lamb is browned on all sides.

    Simmer

    Pour in the water, bring to a simmer, cover the pot, and reduce the heat to low. Cook for about 1 hour, or until the lamb is tender.

    Add Spinach

    Once the lamb is tender, stir in the chopped spinach, cover, and cook for an additional 5-7 minutes until the spinach is wilted and tender.

    Final Seasoning

    Taste and adjust seasoning with more salt or spices if necessary. Serve hot.
