Heat the Oil
In a large pot, heat the cooking oil over medium heat.

Add Ginger and Garlic
Stir in the grated ginger and minced garlic. Cook for an additional 2-3 minutes or until fragrant.

Add Tomatoes and Spices
Add the chopped tomatoes, turmeric powder, coriander powder, cumin powder, red chili powder, and salt to the pot. Stir well and cook for 5-7 minutes until the tomatoes soften.

Cook the Lamb
Add the lamb pieces to the pot, stirring to coat them with the spice mixture. Cook for 5 minutes, allowing the lamb to brown slightly.

Add Water
Pour in the water, bring the mixture to a boil, and then reduce to a simmer.

Simmer the Curry
Cover the pot and let the curry simmer for 1.5 to 2 hours, or until the lamb is tender. Stir occasionally and add more water if needed.

Finish with Garam Masala
Once the lamb is tender, stir in the garam masala and simmer for another 10 minutes.

Garnish and Serve
Remove from heat, garnish with fresh cilantro, and serve hot with rice or naan.
