    Prep Chicken

    Start by preparing the chicken. Cut the chicken breast into bite-sized pieces and season with salt and black pepper.

    Prep Vegetables

    Slice the bell pepper, zucchini, and carrot into thin strips. Set aside.

    Prep Rice

    Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.

Cooking

    Sauté Curry Paste

    In a large pan or wok, heat a tablespoon of oil over medium heat. Add the green curry paste and sauté for about 1 minute until fragrant.

    Cook Chicken

    Add the chicken pieces to the pan and cook until no longer pink, about 5-7 minutes.

    Add Coconut Milk

    Pour in the coconut milk and stir to combine. Bring the mixture to a gentle simmer.

    Add Vegetables

    Add the sliced bell pepper, zucchini, carrot, and snow peas to the pan. Stir and cook for 5-7 minutes until the vegetables are tender.

    Stir in the fish sauce, sugar, and lime juice. Taste and adjust seasoning with additional salt or pepper if necessary.

    Cook the jasmine rice according to package instructions while the curry simmers.

    Once the vegetables are cooked and the flavors are well combined, remove from heat and stir in fresh basil leaves.
