Method

Egg Filling

  1. 1

    Prepare the Egg Mixture

In a mixing bowl, crack the eggs and whisk them until well blended. Add salt and black pepper to taste.

  2. 2

    Sauté Vegetables

Heat a skillet over medium heat and add a small amount of vegetable oil. Add chopped green bell pepper and onion, then sauté until they are soft and translucent, about 5 minutes.

  3. 3

    Combine Ingredients

Add the sautéed vegetables to the egg mixture, then stir in the cheddar cheese until evenly distributed.

Roll Wrapper

  1. 4

    Make the Dough

In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while stirring until a dough forms. Knead the dough for about 5 minutes until smooth and elastic.

  2. 5

    Rest the Dough

Cover the dough with a damp cloth and let it rest for 30 minutes to relax the gluten.

  3. 6

    Roll Out the Dough

Divide the dough into small balls. Roll each ball out into thin circles (about 6 inches in diameter) on a floured surface.

Cooking

  1. 7

    Fill the Wrappers

Place a spoonful of the egg mixture in the center of each dough circle. Fold the edges over the filling to create a roll, sealing the edges by pressing them together.

  2. 8

    Fry the Rolls

In a deep skillet, heat the vegetable oil over medium-high heat. Once hot, carefully place the egg rolls into the oil, frying in batches until golden brown, about 3-4 minutes on each side.

  3. 9

    Drain and Serve

Remove the egg rolls from the oil and drain on paper towels. Serve hot with your favorite dipping sauce.
