Tadka (Tempering)
Cooking Lentils
1. Rinse and Cook Lentils
Rinse the yellow lentils under cold water until the water runs clear. In a pot, combine the rinsed lentils and water. Bring to a boil over medium-high heat.
2. Add Spices
Once boiling, reduce the heat to low. Add turmeric powder and salt to taste. Cover the pot and let it simmer for about 20-25 minutes or until the lentils are soft and cooked through.
Preparing Tadka
3. Heat Ghee or Oil
In a separate pan, heat ghee or oil over medium heat.
4. Add Onion
Add the finely chopped onion to the pan and sauté until it becomes translucent and slightly golden.
5. Add Garlic and Green Chili
Stir in the minced garlic and slit green chili. Sauté for another 1-2 minutes until the garlic is fragrant.
6. Add Tomato
Add the chopped tomato to the pan. Cook until the tomato softens and breaks down, about 3-4 minutes.
7. Add Garam Masala
Sprinkle in the garam masala and stir well to combine. Cook for an additional minute.
Combining and Garnishing
8. Combine Lentils and Tadka
Once the lentils are cooked, pour the tadka mixture over the lentils. Stir to combine everything well. Adjust salt if needed.
9. Garnish
Chop the fresh coriander leaves and sprinkle them on top of the daal before serving.
