Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Ramekins

Grease four 6-ounce ramekins with butter and dust them with flour, tapping out any excess. This will prevent the cakes from sticking.

Making the Cake Batter

  1. 3

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the semisweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring after each, until melted and smooth.

  2. 4

    Mix Sugar and Eggs

In a mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until well combined and slightly thickened.

  3. 5

    Combine Mixtures

Add the melted chocolate mixture to the egg mixture and stir until fully incorporated.

  4. 6

    Add Vanilla and Dry Ingredients

Stir in the vanilla extract and a pinch of salt. Then gently fold in the flour until just combined, being careful not to overmix.

Baking the Cakes

  1. 7

    Fill Ramekins

Pour the batter evenly into the prepared ramekins, filling them about 3/4 full.

  2. 8

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

Serving the Cake

  1. 9

    Cool Slightly

Remove the cakes from the oven and let them cool for 1 minute.

  2. 10

    Invert and Serve

Carefully invert each ramekin onto a plate. Dust with powdered sugar, and serve immediately with a scoop of vanilla ice cream.
