For the Chicken Marinade

For the Peanut Sauce

For the Skewers

Method

Preparing the Chicken Marinade

  1. 1

    Marinate the Chicken

In a large bowl, combine coconut milk, soy sauce, ground coriander, ground cumin, minced garlic, minced ginger, turmeric powder, brown sugar, lime juice, salt, and black pepper. Stir well to mix all the ingredients together.

  2. 2

    Add Chicken

Cut the boneless chicken breast into strips or cubes and add them to the marinade. Ensure all pieces are thoroughly coated. Cover the bowl and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Making the Peanut Sauce

  1. 3

    Prepare the Peanut Sauce

In a medium bowl, mix together peanut butter, coconut milk, soy sauce, lime juice, minced garlic, brown sugar, and chili paste. Stir until smooth and well combined. If the sauce is too thick, gradually add water until the desired consistency is reached.

Assembling and Cooking

  1. 4

    Prepare the Skewers

Soak the wooden skewers in water for at least 30 minutes to prevent burning while grilling.

  2. 5

    Skewer the Chicken

Once the chicken has marinated, remove it from the refrigerator. Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between each piece.

  3. 6

    Grill the Satay

Preheat your grill or grill pan over medium-high heat. Grill the chicken skewers for 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.

  4. 7

    Serve

Serve the chicken satay hot, garnished with fresh cilantro if desired, and with the peanut sauce on the side for dipping.
