Prep the Ingredients
Dice the boneless chicken breast into cubes. Finely chop the onion, ginger, and garlic. Chop the tomato into small pieces.

Incorporate the Spices
Add the curry powder, turmeric powder, cumin powder, red chili powder, salt, and black pepper to the onion mixture. Stir well to combine and cook for 1-2 minutes to toast the spices.

Add Chicken
Add the cubed chicken to the pan. Stir well to coat the chicken with the spice mixture. Cook for about 5-7 minutes until the chicken is browned on all sides.

Add Tomato and Coconut Milk
Add the chopped tomato to the pan and cook for another 2 minutes. Then pour in the coconut milk and stir well. Bring the mixture to a gentle simmer.

Simmer the Curry
Reduce the heat to low, cover the pan, and let the curry simmer for 15-20 minutes until the chicken is cooked through and tender.

Garnish and Serve
Once the curry is cooked, remove it from heat. Chop fresh coriander and sprinkle on top of the curry. Serve hot with rice or bread.
