If using dry chickpeas, soak them overnight and cook until tender. Canned chickpeas can be rinsed and used directly.

Sauté the Onion
In a large skillet or pot, heat the vegetable oil over medium heat. Add the finely chopped onions and sauté until they are translucent and golden brown, about 5-7 minutes.

Add Spices
Stir in the cumin seeds, turmeric powder, coriander powder, red chili powder, and salt. Cook for another 1-2 minutes to toast the spices.

Add Tomatoes and Chickpeas
Add the diced tomatoes and cooked chickpeas to the skillet. Mix well to combine all ingredients.

Simmer
Reduce the heat to low, cover, and let the mixture simmer for about 15-20 minutes, stirring occasionally. If the mixture is too thick, you can add a splash of water.

Finish with Garam Masala
Stir in the garam masala and cook for another 5 minutes to allow the flavors to meld.
