Preparation of Cauliflower

Smoke the Cauliflower
Preheat your tandoor or oven to a high temperature. Cut the cauliflower into florets and skewer them. Brush with oil, sprinkle with salt and red chili powder. Smoke in the tandoor for about 15-20 minutes or until slightly charred.

Incorporate Tomatoes
Add chopped tomatoes to the pan and cook until they soften and break down into a sauce, about 5-7 minutes.

Add Spices
Stir in the coriander powder, turmeric powder, garam masala, fenugreek leaves, and red chili powder. Cook for another 2-3 minutes.

Blend the Sauce
If desired, blend the mixture for a smoother consistency, then return it to the pan.
Combine and Finish

Add Cauliflower
Gently fold the smoked cauliflower into the sauce. Stir to combine and let simmer for about 5 minutes.

Finish with Heavy Cream
Pour in the heavy cream, mix well, and let it simmer for an additional 2-3 minutes. Adjust salt to taste.
