For the Mo:Mo Dumplings

    Make the Dough

    In a large bowl, combine the all-purpose flour and salt. Gradually add water while mixing until a soft dough forms. Knead the dough for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Prepare the Filling

    In a mixing bowl, combine the ground beef, chopped onion, minced garlic, minced ginger, chopped cilantro, soy sauce, and pepper. Mix well until all ingredients are evenly distributed.

    Shape the Dumplings

    Divide the rested dough into small balls (about the size of a golf ball). Roll each ball into a thin circle (about 3 inches in diameter). Place a spoonful of the filling in the center of each circle. Fold the dough over the filling and pinch the edges to seal. You can pleat the edges for a decorative finish.

    Steam the Mo:Mo

    Prepare a steamer and bring water to a boil. Place the dumplings in the steamer basket, making sure they don’t touch each other. Steam for about 15-20 minutes until fully cooked.

    In a saucepan, heat the oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant (about 1-2 minutes). Mix in the red chili powder and stir well.

    Combine Ingredients

    Add the tomato ketchup, soy sauce, sugar, salt, and water to the pan. Stir to combine all ingredients. Bring the sauce to a simmer and let it cook for about 5-7 minutes until slightly thickened.

    Adjust Seasoning

    Taste the sauce and adjust the salt or sugar according to your preference. If you like it spicier, add more chili powder.
