    Prepare the Ingredients

    Thinly slice the beef sirloin and chop all vegetables (carrots, green onions). Mince the garlic and ginger.

    Cook the Rice

    Ensure the rice is cooked ahead of time and cooled. Day-old rice works best for fried rice.

    Heat the Oil

    In a large skillet or wok, heat the vegetable oil over medium-high heat until hot.

    Stir-fry the Beef

    Add the sliced beef to the skillet and stir-fry for about 3-4 minutes, or until browned and cooked through. Remove the beef from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, add the diced carrots and stir-fry for 2 minutes, then add the green peas, garlic, and ginger. Stir-fry for another 2 minutes until the vegetables are tender.

    Add the Rice and Sauce

    Add the cooked rice to the skillet, breaking up any clumps. Pour in the soy sauce, oyster sauce, and sesame oil. Stir well to combine all ingredients.

    Combine and Season

    Add the cooked beef back to the skillet. Stir everything together and season with salt and black pepper to taste. Cook for an additional 2-3 minutes until everything is heated through.

    Finish with Green Onions

    Remove from heat and stir in the chopped green onions. Serve hot.
