    Gradually add water to the flour mixture and knead to form a smooth and soft dough. Cover the dough with a damp cloth and let it rest for 20-30 minutes.

    In another bowl, mix the boiled and mashed potatoes with green chilies, coriander leaves, cumin seeds, garam masala, and salt. Ensure the mixture is well combined.

    Rolling the Parathas

    Divide the dough into equal-sized balls. Take one ball, flatten it slightly, and roll it out into a small circle. Place a generous amount of the potato filling in the center and fold the edges over the filling, sealing it well. Roll it out again gently to form a paratha.

    Cooking the Parathas

    Heat a tava or non-stick skillet over medium heat. Add a tablespoon of ghee or oil. Once hot, place the rolled paratha on the skillet. Cook for 2-3 minutes until golden brown, then flip and add more ghee or oil. Cook the other side for another 2-3 minutes. Repeat with the remaining dough and filling.
