1. Prepare the Ingredients
Start by chopping the chicken breast into bite-sized pieces, and slice the bell peppers and onion thinly. Mince the garlic and grate the ginger.
2. Cook the Rice
In a pot, combine 1 cup of rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until the water is absorbed and the rice is tender.
3. Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add minced garlic and ginger, and sauté for about 1 minute until fragrant. Add sliced onion and bell peppers, and cook until softened.
4. Cook the Chicken
Add the chopped chicken breast to the skillet with the vegetables. Cook until the chicken is no longer pink, about 5-7 minutes.
5. Add Soy Sauce
Pour in the soy sauce, and season with salt and pepper to taste. Stir well and cook for another 2-3 minutes.
6. Serve
