Cooking the Pasta

Boil Water
In a large pot, bring 4 quarts of water to a boil. Add 1 tsp of salt.

Cook Macaroni
Add 2 cups of elbow macaroni to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Drain Pasta
Once cooked, drain the macaroni in a colander and set aside.
Making the Cheese Sauce

Create Roux
Add 1 tbs of all-purpose flour to the melted butter and whisk for about 1 minute until it becomes a paste.

Add Milk
Slowly whisk in 2 cups of milk and bring to a gentle simmer while stirring frequently.

Add Cheeses
Once the milk mixture is simmering, add 2 cups of cheddar cheese, 4 oz of cream cheese, 1 tsp of mustard powder, 1 tsp of garlic powder, 1 tsp of paprika, 0.5 tsp of salt, and 0.25 tsp of black pepper. Stir until the cheeses melt and the sauce is smooth.

Combine Pasta and Sauce
Add the drained macaroni into the cheese sauce and stir until all the pasta is evenly coated.

Prepare Topping
In a small bowl, mix 0.5 cups of breadcrumbs, 0.5 cups of parmesan cheese, and 2 tbs of melted butter.

Bake
Preheat the oven to 350°F (175°C). Pour the mac and cheese into a greased baking dish and sprinkle the breadcrumb topping evenly over the top. Bake for 25-30 minutes until the top is golden brown and crispy.
