Prepare the Chicken
Rinse the chicken pieces under cold water and pat them dry with paper towels. Set aside.

Make the Breading Station
In one bowl, combine the all-purpose flour, cornstarch, Cajun seasoning, salt, and black pepper. In another bowl, whisk together the eggs and milk until well combined.

Bread the Chicken
Dip each chicken piece first into the flour mixture, ensuring it is fully coated. Next, dip it into the egg mixture, allowing any excess to drip off, and then return it to the flour mixture for a second coating. Press the flour onto the chicken to ensure it sticks.

Heat the Oil
In a large, deep skillet or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature by dropping a small amount of breading into the oil; if it sizzles, it’s ready.

Fry the Chicken
Carefully place the breaded chicken pieces into the hot oil, making sure not to overcrowd the pan. Fry for about 8-10 minutes on each side or until the chicken is golden brown and cooked through (internal temperature should reach 165°F / 74°C).

Drain and Serve
Once cooked, remove the chicken from the oil and place it on a plate lined with paper towels to drain excess oil. Serve hot with honey biscuits on the side.
