Prepare the Chicken
Cut the jumbo chicken breasts into tenders. Season them with salt, black pepper, and Cajun seasoning. Set aside.

Bread the Chicken
Dredge each tender in flour, then dip into the egg mixture, and finally coat with breadcrumbs. Press the breadcrumbs onto the chicken to ensure they adhere.

Heat the Oil
In a large frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Preheat the Oven
Preheat your oven to 450°F (232°C).

Mix Dry Ingredients
In a mixing bowl, combine the flour, baking powder, and salt.

Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Turn the dough onto a floured surface and gently pat it down to about 1-inch thickness. Cut into rounds using a biscuit cutter.
