Prepare the Ingredients
Dice the onion, bell pepper, and celery. Mince the garlic. Chop the green onions and set aside for garnish.

Cook the Proteins
In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the chorizo sausage and cook for about 5 minutes until browned. Next, add the diced chicken breast and cook until no longer pink, about 5-7 minutes.

Add the Rice and Liquids
Stir in the long-grain rice and cook for an additional 2 minutes. Then add the canned diced tomatoes, chicken broth, Cajun seasoning, salt, black pepper, and bay leaves.

Simmer the Jambalaya
Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for 20-25 minutes, or until the rice is cooked and has absorbed most of the liquid.

Add the Shrimp
After 20-25 minutes, add the peeled and deveined shrimp to the pot. Stir gently, cover, and cook for an additional 5 minutes until the shrimp are pink and cooked through.
Serving

Serve the Jambalaya
Remove the bay leaves and discard. Serve the jambalaya hot, garnished with chopped green onions.
