Prepare the Coffee
Brew 1 cup of espresso and let it cool. You can add coffee liqueur if desired.

Mix the Egg Yolks and Sugar
In a medium bowl, whisk together 3 egg yolks and 1 cup of granulated sugar until the mixture is pale and creamy.

Add Mascarpone
Fold in 1 cup of mascarpone cheese into the egg yolk mixture until smooth and well combined.

Whip the Cream
In a separate bowl, whip 1 cup of heavy cream until stiff peaks form.

Combine Mixtures
Gently fold the whipped cream into the mascarpone mixture until fully incorporated.
Assembly

Dip Ladyfingers
Quickly dip each ladyfinger cookie into the cooled espresso (and coffee liqueur, if using) and layer them in a 9x9 inch dish.

Layer the Cream Mixture
Spread half of the mascarpone mixture over the layer of ladyfingers in the dish.

Repeat Layers
Add another layer of dipped ladyfingers followed by the remaining mascarpone mixture.

Chill
Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.

Serve
Before serving, dust the top with 2 tablespoons of cocoa powder for garnish.
