Preparation
- 1
Prepare the Seafood
Clean and devein the shrimp. Clean the mussels by scrubbing their shells and removing the beards. Cut the calamari into rings.
- 2
Prepare the Broth
In a saucepan, warm the fish stock or seafood broth over low heat. Add saffron threads to the broth to infuse it with flavor.
Cooking
- 3
Sauté the Vegetables
In a large paella pan or skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- 4
Add Garlic and Bell Pepper
Stir in minced garlic and chopped bell pepper. Cook for another 3-4 minutes until the bell pepper softens.
- 5
Incorporate Rice and Spices
Add the basmati rice, paprika, salt, and black pepper to the pan. Stir well to coat the rice with the spices and oil.
- 6
Add Broth
Pour the warm fish stock with saffron into the pan. Bring the mixture to a boil, then reduce heat to low.
- 7
Add Seafood
After 10 minutes of simmering, add the shrimp, mussels, calamari, and frozen peas to the rice mixture. Stir gently to combine.
- 8
Simmer
Cover the pan with a lid or aluminum foil and let it simmer for another 10-15 minutes, or until the seafood is cooked and the rice is tender.
