Marinade Preparation

    Prepare the Marinade

    In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Mix well.

    Marinate the Lamb

    Add the cubed lamb shoulder to the marinade, ensuring all pieces are coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight.

Tzatziki Sauce Preparation

    Mix the Tzatziki Ingredients

    In a separate bowl, combine Greek yogurt, grated cucumber (ensure it’s well-drained), minced garlic, olive oil, lemon juice, chopped dill, and salt. Stir until well combined.

    Chill the Tzatziki

    Cover the tzatziki sauce and refrigerate for at least 30 minutes to allow the flavors to meld.

Grilling the Lamb

    Prepare Skewers

    If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat the grill to medium-high heat.

    Skewer the Lamb

    Thread the marinated lamb pieces onto the skewers, leaving some space between each piece for even cooking.

    Grill the Lamb

    Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally until the lamb is nicely charred and cooked to your desired doneness.

Serving

    Remove the lamb skewers from the grill and let them rest for a few minutes. Serve hot with tzatziki sauce, pita bread, and fresh vegetables.
