Lamb Marinade

    Prepare the Marinade

    In a large bowl, whisk together olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, lemon juice, and chopped mint.

    Marinate the Lamb

    Add the lamb to the bowl, ensuring it is well-coated with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

Cooking the Lamb

    Cook the Lamb

    Preheat your grill or skillet over medium-high heat. Remove the lamb from the marinade and discard the marinade. Grill the lamb for about 5-6 minutes per side until it reaches your desired doneness. Let it rest for 5 minutes before slicing thinly.

Tzatziki Sauce

    Make the Tzatziki Sauce

    In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, and salt. Mix well and refrigerate until ready to use.

Gyro Assembly

    Assemble the Gyros

    Warm the pita bread slightly on the grill or in a skillet. Place a portion of chopped romaine lettuce, sliced lamb, diced tomato, and red onion on each pita. Drizzle with tzatziki sauce and fold the pita over the filling.
