Marinated Pork

In a large bowl, combine the olive oil, minced garlic, Greek yogurt, lemon juice, dried oregano, salt, and black pepper. Mix well.

Marinate the Pork
Add the pork shoulder to the marinade, ensuring it is well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.

Cook the Pork
Preheat your grill or oven to medium-high heat. Cook the marinated pork for about 25-30 minutes, turning occasionally, until fully cooked and internal temperature reaches 145°F (63°C).

Rest and Slice
Remove the pork from the heat and let it rest for 10 minutes before slicing thinly.

Cover the tzatziki sauce and refrigerate for at least 30 minutes to allow the flavors to meld.

In a large bowl, combine the diced cucumbers, diced tomatoes, sliced red onion, crumbled feta cheese, and black olives.
