Preparation of Lamb Chops

    Marinate the Lamb Chops

    In a large bowl, mix olive oil, minced garlic, chopped fresh rosemary, salt, and black pepper. Add the lamb chops and coat them well. Cover and let marinate in the refrigerator for at least 1 hour, or overnight for better flavor.

    Preheat the Grill

    Preheat your grill to medium-high heat (about 400°F / 200°C).

Cooking the Lamb Chops

    Grill the Lamb Chops

    Remove the lamb chops from the marinade and let excess marinade drip off. Place the chops on the grill and cook for about 4-5 minutes on each side for medium-rare, or until they reach the desired doneness. Remove from the grill and let rest for 5 minutes.

Preparing Mint Yogurt Sauce

    Make the Sauce

    In a bowl, mix plain yogurt, finely chopped fresh mint leaves, lemon juice, and salt. Stir until combined and adjust seasoning to taste. Refrigerate until ready to serve.

Cooking Seasonal Vegetables

    Chop zucchini, bell peppers, and carrots into bite-sized pieces. In a large bowl, toss the vegetables with olive oil, salt, and black pepper.
