Mousse Preparation

Melt the Chocolate
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water and stir until melted and smooth. Remove from heat and let cool slightly.

Whip the Egg Yolks
In a separate bowl, whisk together the large egg yolks and granulated sugar until pale and creamy. Stir in the melted chocolate mixture and vanilla extract. Add a pinch of salt.

Beat the Egg Whites
In a clean mixing bowl, beat the egg whites until stiff peaks form. Gently fold one-third of the egg whites into the chocolate mixture to lighten it, then carefully fold in the remaining egg whites until no white streaks remain.

Chill the Mousse
Spoon the mousse into serving dishes and refrigerate for at least 2 hours or until set.

Prepare the Whipped Cream
In a mixing bowl, add the heavy whipping cream, powdered sugar, and vanilla extract. Beat with an electric mixer on high speed until soft peaks form.

Top the Mousse
Once the mousse is set, remove from the refrigerator and dollop the whipped cream on top of each serving. Optionally, garnish with chocolate shavings or berries.
