Marinating the Chicken

    Prepare the Marinade

    In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Mix well.

    Marinate the Chicken

    Cut the chicken breasts into 1-inch cubes and add to the marinade. Toss to coat chicken evenly. Cover and refrigerate for at least 1 hour or up to overnight.

Preparing the Vegetables

    Prep the Vegetables

    While the chicken is marinating, cut the bell peppers, red onion, and zucchini into chunks suitable for skewering.

Cooking the Rice

    Cook the Rice

    In a medium saucepan, combine water and salt. Bring to a boil, then add the rice. Stir once, cover, and reduce heat to low. Cook for 18-20 minutes until rice is tender and water is absorbed. Remove from heat and let sit covered for 5 minutes before fluffing with a fork.

Grilling the Souvlaki

    Prepare the Skewers

    If using wooden skewers, soak them in water for 30 minutes to prevent burning. Alternate threading chicken and vegetables onto skewers.

    Grill the Skewers

    Preheat the grill to medium-high heat. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks.

Serving

    Serve the grilled chicken souvlaki over a bed of rice with the grilled vegetables on the side. Enjoy!
