Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Breading
In a bowl, mix together flour, cornstarch, salt, black pepper, garlic powder, and paprika.

Coat the Calamari
Dip each calamari ring first into the wet mixture, then into the dry breading mixture, ensuring they are well coated.
Frying the Calamari

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy.

Drain the Calamari
Using a slotted spoon, remove the fried calamari and place them on paper towels to drain excess oil.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Bring to a simmer and let cook for about 20 minutes, stirring occasionally.
