Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Prepare the Nut Filling

    In a food processor, combine walnuts, almonds, sugar, and cinnamon. Pulse until the nuts are finely chopped but not pureed. Set aside.

    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and let cool slightly.

Assembling the Baklava

    Layer Phyllo Dough

    Take the package of phyllo dough and unroll it carefully. Brush a 9x13 inch baking dish with melted butter. Place one sheet of phyllo dough in the dish and brush with more melted butter. Repeat this process, layering and buttering each sheet, for about 8 sheets.

    Add Nut Filling

    Spread a thin layer of the nut mixture over the phyllo dough. Continue layering phyllo sheets (about 4 sheets at a time) and brushing with butter until half of the dough is used.

    Add More Nuts

    Add another layer of the nut mixture, then continue layering phyllo dough (4 sheets at a time) until all the dough is used. Finish with a top layer of at least 8 sheets, each brushed with butter.

    Cut the Baklava

    Using a sharp knife, cut the baklava into diamond or square shapes before baking.

Baking

    Bake the Baklava

    Place the baking dish in the preheated oven and bake for about 45-50 minutes or until the top is golden brown.

    Prepare the Honey Syrup

    While the baklava is baking, combine honey, water, and vanilla extract in a saucepan. Bring to a boil, then reduce heat and let simmer for 10 minutes.

    Add Syrup to Baklava

    Once the baklava is baked, remove it from the oven and immediately pour the hot honey syrup over it. Allow it to soak for several hours or overnight before serving.
