Preparation Steps

    Prepare the Rice

    Wash and soak the rice and glutinous rice for at least 8 hours or overnight in water.

    Cook the Rice

    Drain the soaked rice and steam it in a steamer for about 30-40 minutes until fully cooked.

    Prepare the Mash

    Once the rice is cooked, let it cool to room temperature. Then, mix the cooked rice with barley and optional sweet potato or tapioca.

    Add Water and Yeast

    In a large container, combine the mash with 8 cups of water and sprinkle yeast over the mixture. Stir well to combine.

    Fermentation

    Cover the container with a cloth and let it ferment at room temperature for about 5-7 days. Stir the mixture daily.

    Distillation

    After fermentation, transfer the liquid to a distillation apparatus and heat slowly to separate the alcohol. Collect the distillate.

    Bottle and Age

    Bottle the soju and let it age for at least a week before consuming for better flavor.
