Method

Preparing Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over high heat, then reduce to low, cover, and simmer for 20 minutes. Remove from heat and let it sit, covered, for another 10 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture with a spatula. Allow the rice to cool to room temperature.

Preparing Fillings

    Slice the Vegetables

    Thinly slice the cucumber, avocado, and carrot into matchstick shapes. Set aside.

    Prepare Crab Meat

    If using real crab, shred the crab meat. If using imitation crab, pull apart into smaller pieces.

    Prepare Cream Cheese

    Soften the cream cheese at room temperature for easier spreading.

Rolling the Sushi

    Lay Out the Nori

    Place a bamboo sushi mat on a clean surface and lay a sheet of nori, shiny side down, on the mat.

    Spread the Rice

    With wet hands, take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    Add Fillings

    In the center of the rice, arrange a line of cucumber, avocado, crab meat, carrot, and a smear of cream cheese.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Seal the edge with a bit of water.

    Cut the Roll

    With a sharp knife, slice the roll into bite-sized pieces, cleaning the knife with a damp cloth between cuts.

Serving

    Plate the Sushi

    Arrange the sushi pieces on a serving plate and serve with soy sauce, wasabi, and pickled ginger on the side.
