Rehydrate the Seaweed

In a bowl, add 1 cup of dried wakame seaweed and cover it with warm water. Let it soak for about 10-15 minutes until it expands and becomes tender. Drain and squeeze out excess water.

While the seaweed is soaking, wash and slice the cucumber into thin rounds, julienne the carrot into thin strips, and thinly slice the radishes.

Combine Ingredients

In a large bowl, combine the rehydrated wakame, cucumber, carrot, and radish. Toss gently to mix.

In a small bowl, whisk together 3 tablespoons of soy sauce, 2 tablespoons of rice vinegar, 1 tablespoon of sesame oil, and 1 teaspoon of sugar until the sugar is dissolved.

Chop the green onions finely and add them to the dressing mixture.
