Method
Prepare Sushi Rice

Rinse the rice
Place the sushi rice in a fine mesh strainer and rinse it under cold water until the water runs clear. This removes excess starch.

Cook the rice
In a medium saucepan, combine the rinsed rice and 2.5 cups of water. Bring to a boil over high heat, then reduce to low, cover, and simmer for 20 minutes or until the water is absorbed.

Season the rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.
Prepare Sushi Rolls

Prepare the Nori
Place a sheet of nori on a bamboo sushi mat, shiny side down.

Add rice
Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

Roll the sushi
Lift the edge of the mat closest to you and roll it over the fillings, applying gentle pressure. Continue rolling until the sushi is completely rolled up.

Slice the sushi
Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to keep the edges clean.
Plate the Sushi

Arrange the platter
Place the sliced sushi rolls on a serving platter. Add slices of sashimi (salmon and tuna) around the sushi.

Add accompaniments
Serve with small bowls of soy sauce, a dollop of wasabi, and pickled ginger on the side.
