Prepare the Shrimp

Rinse the shrimp under cold water and pat them dry with paper towels.

In a bowl, season the shrimp lightly with salt and pepper. Set aside.
Make the Batter

In a large mixing bowl, combine the all-purpose flour, cornstarch, and baking powder.

Pour the egg mixture into the dry ingredients and stir until just combined. The batter should be lumpy; do not overmix.
Prepare the Dipping Sauce

In a small bowl, whisk together the soy sauce, mirin, sugar, green onion, and sesame oil until the sugar dissolves.
Fry the Shrimp

In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Dip each shrimp into the batter, allowing excess batter to drip off.

Carefully place the battered shrimp into the hot oil, frying in small batches to avoid overcrowding.
