Combine Ingredients
In a mixing bowl, combine the sweet rice flour and granulated sugar.

Add Water
Gradually add the water to the dry mixture, stirring until the mixture is smooth and free of lumps.

Steam the Mixture
Transfer the mochi mixture to a heatproof dish or steaming basket lined with parchment paper. Steam over boiling water for about 20 minutes, or until the dough becomes translucent.

Cool and Prepare
Once cooked, remove the mochi from the steamer and let it cool slightly. Dust a clean surface with cornstarch to prevent sticking.

Knead the Dough
Once the dough is cool enough to handle, knead it gently on the dusted surface until it becomes smooth.
Assembling Mochi Ice Cream

Prepare Ice Cream Balls
Scoop the ice cream into small balls (about 1 tablespoon each) and place them on a tray. Freeze for at least 30 minutes to firm up.

Shape the Mochi
Divide the mochi dough into small pieces (approximately 2 inches in diameter). Flatten each piece into a round disc, dusting with cornstarch to prevent sticking.

Wrap the Ice Cream
Place a frozen ice cream ball in the center of each mochi disc. Gently fold the edges of the mochi over the ice cream, pinching to seal completely.

Final Freeze
Place the sealed mochi balls back on the tray, dust with cornstarch, and freeze for at least 1 hour to set.
