Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs and granulated sugar. Pour in the melted butter and stir until all the crumbs are evenly coated.

Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan. Make sure it is evenly spread out. Bake in the preheated oven for 8-10 minutes until slightly golden. Remove from oven and let it cool while preparing the filling.

Mix the cheesecake filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the granulated sugar and mix until combined.

Add remaining filling ingredients
Add the sour cream, eggs (one at a time), matcha green tea powder, vanilla extract, and lemon juice to the cream cheese mixture. Beat until fully combined and smooth, scraping down the sides of the bowl as necessary.

Pour and bake
Pour the filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the oven for 50-60 minutes or until the center is set but still slightly jiggly.

Cool and chill
Turn off the oven, crack the door open, and let the cheesecake cool inside for about an hour. Then remove it from the oven and refrigerate for at least 4 hours, preferably overnight, before serving.
