Tacos

    Cook Ground Beef

    In a skillet over medium heat, add the ground beef. Cook, breaking it up with a spatula until browned, about 5-7 minutes.

    Add Taco Seasoning

    Stir in the taco seasoning and follow the package instructions, usually adding a small amount of water and simmering for a few minutes until thickened.

    Prepare Tortillas

    In a separate skillet, heat oil over medium heat. Once hot, add corn tortillas one at a time, cooking each side until crispy, about 30 seconds per side.

    Assemble Tacos

    Fill each crispy tortilla with a portion of the seasoned ground beef, followed by shredded lettuce, diced tomato, and shredded cheese. Set aside.

Refried Beans

    Heat Beans

    In a saucepan, heat the canned refried beans over medium heat. Stir occasionally until heated through, about 5 minutes.

    Add Cheese

    Once heated, stir in cheddar cheese until melted and creamy. Remove from heat and set aside.

Spanish Rice

    Sauté Onions and Garlic

    In a saucepan, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent, about 3-4 minutes.

    Toast Rice

    Add the rice to the saucepan, stirring to coat with oil. Toast the rice for 2-3 minutes until slightly golden.

    Add Broth and Tomatoes

    Pour in chicken broth and diced tomatoes. Add cumin, salt, and black pepper. Bring to a boil.

    Simmer Rice

    Reduce heat to low, cover, and let simmer for 15-20 minutes or until rice is tender and liquid is absorbed.
