Tamales Platter Recipe
Two chicken or pork tamales served with our traditional chile gravy sauce on top. Served with refried beans and Spanish rice.

Tamales Preparation

Prepare the Masa
In a large mixing bowl, combine masa harina, baking powder, and salt. Mix well.

Add Lard
In a separate bowl, beat the lard or vegetable shortening until fluffy. Gradually add the masa mixture, alternating with the chicken or pork broth, and mix until smooth.

Assemble Tamales
Lay a soaked corn husk flat, spread about 1/4 cup of the masa mixture on the husk, add a couple of tablespoons of shredded chicken or pork in the center, then fold the sides over and tie with a strip of corn husk.

Steam Tamales
Place the tamales upright in a steamer pot, cover with a damp cloth, and steam for about 1-1.5 hours until the masa pulls away easily from the husk.

Cook Rice
Add rice to the saucepan and stir for 2 minutes. Then add chicken broth, tomato sauce, cumin, and salt. Bring to a boil.

Simmer
Reduce heat to low, cover, and simmer for about 20 minutes until rice is cooked and liquid is absorbed.
