Preparation

    Chop the Vegetables

    Finely chop the onion and dice the tomatoes and jalapeño peppers. Rinse and roughly chop the fresh spinach.

    Sauté the Onions

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

Cooking

    Add Spinach and Spices

    Add the chopped spinach to the skillet and cook until wilted, stirring frequently. This should take about 2-3 minutes. Then, add garlic powder, salt, black pepper, and red pepper flakes, stirring to combine.

    Combine Cheeses

    In a mixing bowl, combine the softened cream cheese and Monterey Jack cheese. Mix until smooth and well combined.

    Mix Everything Together

    Add the sautéed spinach mixture and diced tomatoes to the cheese mixture. Stir until all ingredients are evenly mixed.

Baking

    Bake the Dip

    Transfer the mixture to a baking dish and spread it evenly. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the top is golden and bubbly.
