Method

Fajitas

    Prepare the Marinade

    In a bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper. Mix well.

    Marinate the Chicken

    Place the chicken breast in the marinade and let it sit for at least 30 minutes, or up to 2 hours in the refrigerator.

    Cook the Chicken

    Heat a skillet over medium-high heat. Add the marinated chicken and cook for about 6-7 minutes on each side until cooked through. Remove from skillet and let rest.

    Sauté the Vegetables

    In the same skillet, add sliced bell peppers and onion. Sauté for 5-6 minutes until tender.

    Slice the Chicken

    Once the chicken has rested, slice it into strips and serve with the sautéed bell peppers and onion.

Guacamole

    Prepare the Avocados

    Cut the avocados in half, remove the pit, and scoop the flesh into a bowl.

    Mash the Avocados

    Add lime juice, minced garlic, and salt to the avocados. Mash until smooth or desired consistency.

    Add Tomato and Cilantro

    Fold in the diced tomato and chopped cilantro. Mix well and set aside.

Pico de Gallo

    Chop the Ingredients

    Dice the tomatoes, onion, and chop the cilantro.

    Combine Ingredients

    In a bowl, mix the diced tomatoes, onion, cilantro, lime juice, and salt. Stir well.

Rice and Fried Beans

    Cook the Rice

    In a pot, combine rice and vegetable broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.

    Sauté the Onion and Garlic

    In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté for 3-4 minutes until softened.

    Add the Beans

    Stir in the rinsed black beans, cumin, and salt. Cook for another 5-7 minutes until heated through.
