For the Shrimp Filling

Cook the Shrimp
In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.

For the Chipotle Cream Sauce

Prepare the Sauce
In a small bowl, combine sour cream, chipotle in adobo sauce, and lime juice. Mix well until smooth and set aside.

Assemble the Enchiladas
Preheat your oven to 350°F (175°C). On each flour tortilla, place a portion of the shrimp filling and sprinkle shredded Monterey Jack cheese on top. Roll the tortillas tightly and place seam-side down in a baking dish.

Top with Sauce
Pour the chipotle cream sauce evenly over the rolled tortillas. Sprinkle any remaining Monterey Jack cheese on top.

Bake
Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.

Serve the enchiladas hot, accompanied by black beans and Spanish rice on the side.
