    Prepare the Ingredients

    Finely chop the mushrooms and set aside. Remove the seeds and stem from the poblano peppers, then slice them into strips. Mince the garlic cloves.

    Cook the Chorizo

    In a medium skillet, heat the olive oil over medium heat. Add the chorizo sausage and cook for about 5-7 minutes, breaking it apart with a spatula until browned and cooked through.

    Sauté Vegetables

    Add the minced garlic, mushrooms, and poblano pepper strips to the skillet with the chorizo. Season with salt and black pepper. Sauté for an additional 5-6 minutes until the vegetables are tender.

    Melt the Cheese

    Reduce the heat to low. Tear the Oaxaca cheese into pieces and add it to the skillet along with grated Monterey Jack cheese. Stir gently until the cheese is melted and gooey, about 3-4 minutes.

Serving

    Transfer the queso flameado to a serving dish. Serve immediately with tortilla chips or warm tortillas for dipping.
