Fajita Beef Nachos

Prepare the Beef
In a skillet over medium heat, cook the fajita beef strips until browned and cooked through, about 5-7 minutes.

Assemble the Nachos
Spread the tortilla chips on a baking sheet, top with cooked fajita beef, and sprinkle shredded cheddar cheese evenly over the top.

Melt the Cheese
Place the baking sheet in a preheated oven at 350°F (175°C) for about 5-10 minutes, until the cheese is melted.

Serve
Remove from oven and top with sour cream, sliced jalapeños, and chopped green onions before serving.
Chicken Flautas

Prepare the Flautas
Place shredded cooked chicken in the center of each flour tortilla and roll tightly.

Fry the Flautas
Heat oil in a frying pan over medium heat. Fry each flauta for about 2-3 minutes on each side until golden brown.

Serve
Remove from oil and drain on paper towels. Serve with salsa on the side.
Stuffed Jalapeños

Prepare the Jalapeños
Cut the jalapeños in half lengthwise and remove seeds.

Make the Filling
In a bowl, mix cream cheese, shredded mozzarella cheese, and chopped cilantro until well combined.

Stuff the Jalapeños
Fill each jalapeño half with the cheese mixture.

Bake
Place stuffed jalapeños on a baking sheet and bake at 375°F (190°C) for about 15-20 minutes until the cheese is bubbly.
Mini Quesadillas

Prepare the Quesadillas
Place half of the cheese blend, chopped bell pepper, and onion on one half of each tortilla.

Cook the Quesadillas
Fold the tortillas over and cook in a skillet over medium heat until golden, about 3-4 minutes per side.

Remove from heat, slice into wedges, and serve warm.

In small bowls, serve the spinach dip and ranch dressing alongside the nachos, flautas, jalapeños, and quesadillas.
