Preparation

    Cook the Rice

    In a pot, add 2 cups of water and bring it to a boil. Add 1 cup of white rice, cover, and reduce heat to low. Cook for about 18 minutes until rice is tender and water is absorbed. Fluff with a fork and set aside.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from skillet, drain on paper towels, and chop into small pieces.

    Sauté the Mushrooms

    In the same skillet with the bacon drippings, add sliced mushrooms and sauté until golden brown, about 5 minutes. Remove from heat and set aside.

    Prepare the Chicken

    Grill the chicken breast until fully cooked, about 6-7 minutes on each side. Once done, chop into bite-sized pieces.

    Assemble the Chimichanga

    Lay a flour tortilla on a flat surface. In the center, layer the grilled chicken, bacon, pico de gallo, and sautéed mushrooms. Fold the sides of the tortilla over the filling and roll it up tightly to form a chimichanga.

    Fry the Chimichanga

    In a deep skillet, heat 1 cup of vegetable oil over medium-high heat. Once hot, carefully place the chimichanga seam-side down into the oil. Fry for 3-4 minutes on each side or until golden brown. Remove from oil and drain on paper towels.

    Serve

    Place the fried chimichanga on a plate, top with champagne cheese sauce, and garnish with sliced avocado and shredded lettuce. Serve alongside the cooked white rice.
