Burrito Filling

Cook the Meat
In a large skillet, heat olive oil over medium heat. Add ground beef, seasoned chicken, and pork. Cook until browned and fully cooked, about 8-10 minutes. Drain excess fat.

Season the Meat
Sprinkle taco seasoning mix over the cooked meat. Stir well and cook for another 2-3 minutes until the meat is well coated and the spices are fragrant.

Make the Gravy
In a separate saucepan, combine dried chili powder and ground cumin. Toast for 1 minute over medium heat until fragrant. Add beef broth and stir well.

Thicken the Gravy
In a small bowl, mix cornstarch and water until smooth. Gradually add this mixture to the saucepan with the broth, stirring until the gravy thickens, about 3-5 minutes.
Assemble the Burritos

Fill the Tortillas
Warm the flour tortillas in a dry skillet or microwave. On each tortilla, add a portion of the cooked meat mixture, a generous scoop of chile con queso, and drizzle with chile gravy sauce.

Wrap the Burritos
Fold in the sides of the tortilla and roll it up tightly from the bottom to the top. Repeat with remaining tortillas.
Serve

Plate the Dish
Serve the burritos with a side of refried beans and Spanish rice. Drizzle any remaining chile gravy over the top for extra flavor.
