Prepare Jalapenos

Prep the Peppers
Wash the jalapeno peppers thoroughly. Slice them lengthwise and remove the seeds and membranes carefully using a small knife or spoon.

Make Filling
In a mixing bowl, combine cream cheese, cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined and creamy.

Stuff the Peppers
Use a spoon to fill each jalapeno half with the cream cheese mixture, ensuring they are well packed.
Prepare Batter

Make the Batter
In a medium bowl, whisk together all-purpose flour, cornstarch, baking powder, egg, milk, and salt until smooth. The batter should be thick enough to stick to the jalapenos.
Fry the Peppers

Heat Oil
In a deep skillet or frying pan, heat vegetable oil over medium heat until it reaches 350°F (175°C).

Batter and Fry
Dip each stuffed jalapeno into the batter, allowing excess to drip off. Carefully place them in the hot oil and fry for about 3-4 minutes, or until golden brown. Remove and place on paper towels to drain excess oil.

In a small bowl, combine mayonnaise, buttermilk, dried dill, garlic powder, salt, and black pepper. Whisk until smooth and creamy. Adjust seasoning to taste.
