Mix the Filling
Add the shredded chicken, ground cumin, salt, and black pepper to the skillet. Stir well to combine and heat through for about 3-4 minutes. Remove from heat and set aside.

Prepare the Tortillas
Preheat your oven to 375°F (190°C). Warm the corn tortillas in a dry skillet for about 30 seconds on each side until pliable.

Fill the Tortillas
Place a portion of the chicken filling in the center of each tortilla. Roll them up tightly and place seam-side down in a baking dish.

Add the Sauce
Pour the verde sauce evenly over the filled tortillas. Sprinkle the additional Monterrey Jack cheese on top.

Bake
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Remove the enchiladas from the oven. Top with sour cream and sprinkle with fresh cilantro before serving.
