Preparing the Filling

Cook the Chicken
In a medium pot, bring water to boil. Add the chicken breasts and cook until fully cooked, about 15-20 minutes. Remove from pot and let cool.

Assembling the Enchiladas

Fill the Tortillas
Take a large flour tortilla and place about 1/4 cup of the chicken filling in the center. Roll the tortilla tightly around the filling and place seam side down in a greased baking dish. Repeat with remaining tortillas.

Add Sauce and Cheese
Once all tortillas are filled and placed in the baking dish, pour ranchera sauce evenly over the top. Sprinkle shredded Monterrey Jack cheese over the sauce.

Bake the Enchiladas
Preheat the oven to 375°F (190°C). Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Serve
Remove from the oven and let cool for a few minutes before serving. Garnish with additional cilantro if desired.
