Preparation

    Prepare the Skirt Steak

    Season the skirt steak with garlic powder, cumin, salt, and pepper to taste. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.

    Cook the Skirt Steak

    Add the seasoned skirt steak to the skillet and cook for about 3-4 minutes on each side for medium rare, or until desired doneness. Remove from the skillet and let it rest.

    Prepare the Shrimp

    In the same skillet, add another tablespoon of olive oil. Add the jumbo shrimp and sauté for 2-3 minutes until they turn pink and opaque. Season with salt and pepper.

    Prepare the Enchiladas

    In a baking dish, roll the cooked chicken in one corn tortilla and the ground beef in the other. Place each enchilada seam side down.

    Add Sauce and Cheese

    Pour the green enchilada sauce over the chicken enchilada and the red enchilada sauce over the beef enchilada. Top with shredded cheese.

    Bake the Enchiladas

    Preheat the oven to 350°F (175°C) and bake the enchiladas for 15-20 minutes until the cheese is bubbly and golden.

    On a serving platter, arrange the cooked skirt steak, sautéed shrimp, chicken enchilada, and beef enchilada.

    Serve with a side of charro beans and Spanish rice.
