Marinate the Steak
In a large bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Add the flank steak, ensuring it is well-coated. Cover and marinate in the refrigerator for at least 1 hour (or overnight for more flavor).

Cheese Enchilada

Fill the Tortillas
Fill each softened tortilla with shredded cheese and roll them up tightly. Place them seam-side down in the baking dish.

Add Sauce and Bake
Pour the remaining enchilada sauce over the rolled tortillas and top with any remaining shredded cheese. Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.

Serve
Remove the enchiladas from the oven and let cool for a few minutes. Serve with a dollop of sour cream and a sprinkle of fresh cilantro on top.
