Cheese Enchiladas

Prepare the Enchilada Sauce
In a saucepan, heat the enchilada sauce over medium heat until warmed through. Set aside.

Assemble the Enchiladas
Spread 1 tablespoon of refried beans and 2 tablespoons of shredded cheddar cheese on each tortilla. Roll up the tortillas and place them seam-side down in a greased baking dish.

Top with Sauce and Cheese
Pour the warmed enchilada sauce over the tortillas in the baking dish. Top with remaining cheddar cheese.

Bake
Bake in a preheated oven at 350°F (175°C) for 20 minutes or until the cheese is melted and bubbly.

Serve with Garnish
Remove from oven and garnish with sour cream and chopped green onions before serving.
Crispy Ground Beef Taco

Cook the Ground Beef
In a large skillet, brown the ground beef over medium-high heat until fully cooked, about 7-10 minutes. Drain excess fat.

Season the Beef
Add taco seasoning and water to the beef in the skillet. Stir well and simmer for 5 minutes until the mixture thickens.

Prepare Taco Shells
While the beef is simmering, preheat the oven to 350°F (175°C) and place the hard taco shells on a baking sheet.

Heat Taco Shells
Bake the taco shells in the oven for 5-7 minutes until crispy.

Assemble the Tacos
Fill each crispy taco shell with the seasoned ground beef, shredded lettuce, diced tomatoes, and shredded cheese.

Top with sour cream as desired and serve immediately.
